Ingredients:

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 small black truffle, finely chopped
  • Salt and pepper to taste

Instructions:

In a large saucepan, heat the broth over low heat.
In another large saucepan, heat the butter and olive oil over medium heat. Add the Arborio rice and stir to coat in the butter and oil.
Add the white wine and stir until the liquid is absorbed.
Begin adding the hot broth to the rice, one ladleful at a time, stirring constantly and waiting for the liquid to be absorbed before adding more.
Continue adding broth and stirring until the rice is tender but still has a slight bite to it.
Remove the risotto from the heat and stir in the Parmesan cheese and black truffle. Season with salt and pepper to taste.
